My husband is a meat & potatoes (preferably the mashed kind from a box!) kind of guy. He eats meat everyday, at every meal, and couldn't imagine life without it. He can't begin to fathom how I don't eat animals and why on earth I don't want to. He thinks I'm just one carrot away from the crazy house. But his teasing doesn't discourage my "rabbit-food" eating habits at all. In fact, it just helps further solidify my commitment to reforming him into a fellow veg-lover. In honor of MoFo (Vegan Month of Food), I am going to cook a new vegan meal each day of this month and taste test them on my husband. Since he is a professional hockey player in the minor leagues (yes ladies, I am TRULY blessed) I'm going to choose meals that have plenty of protein, energy-providing vitamins and minerals, and of course, taste delicious. I'll have my husband honestly critique each one- taste, texture, fullness, and ability to hold up to its meat-based counterparts. Finally, I'll pass the feedback (the good, the bad and the ugly) and the recipes on to all of you. At the end of the month we'll see if he crosses over to the GREEN side and perhaps wins a few more games;) Knowing my husband and the comedian that he is, this experiment will be full of hilarity and whit. So come visit tomorrow as the Mad Scientist heads into the lab to begin this Vegan Hockey Experiment.
